Delicious Irish soda bread with plump raisins, leavened by buttermilk and leavening agents.
Ingredients:
  • 1 cup buttermilk, divided
  • 0.5 cup butter, melted - divided
  • 1.5 cups golden raisins
  • 4 cups all-purpose flour
  • 0.25 cup white sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 egg
Instructions:
  • First, preheat your oven to a toasty 350 degrees F (175 degrees C), then generously grease a 9-inch pie plate.
  • Transfer 1 tablespoon of buttermilk to a small bowl, then pour the rest into a medium bowl.
  • Combine 1 tablespoon melted butter with buttermilk in a small bowl, stirring until well mixed. In a medium bowl, mix golden raisins with buttermilk. Let both bowls sit until ready to use.
  • In a large bowl, blend flour, sugar, baking powder, baking soda, and salt. Create a hole in the center and pour in the remaining melted butter; mix until the texture resembles coarse crumbs. Introduce the egg and stir until fully incorporated.
  • Combine the buttermilk-raisin mixture with the flour mixture to form a dough ball. Place the dough in the pie dish and gently shape it so the top is slightly rounded. Score a 1/4-inch deep crisscross pattern on the surface with a sharp knife. Brush the loaf with the buttermilk-butter mixture until evenly coated, making sure to cover every part of the loaf.
  • Bake in the oven preheated to perfection until the loaf turns a beautiful golden brown and a toothpick inserted in the center comes out clean, which should take about 55 minutes to 1 hour.
