Italian potato salad with red wine vinaigrette, crunchy cucumber and celery, and tangy olives for a flavor-packed dish.
Ingredients:
  • 5 large Yukon Gold potatoes
  • 1 large cucumber, chopped
  • 5 stalks celery, chopped
  • 1 large red onion, chopped
  • 0.75 cup green olives with pimento, chopped
  • 0.25 cup olive oil
  • 0.5 cup red wine vinegar
  • 0.25 teaspoon garlic powder
  • salt and ground black pepper to taste
Instructions:
  • In a large saucepan, boil potatoes in water until tender, about 15 minutes. Drain, cool, and cut into 1-inch cubes.
  • Incorporate the potatoes, cucumber, celery, onion, and olives in a spacious bowl.
  • Combine olive oil, red wine vinegar, and garlic powder in a small bowl, whisking until well blended. Drizzle the dressing over the potatoes and vegetables, tossing to coat evenly. Season with salt and pepper, then refrigerate. Stir the potato salad once more before serving.
