Twice-baked chocolate almond bread cookie in a classic Jewish mandelbrot recipe.
Ingredients:
  • 3 eggs
  • 0.75 cup vegetable oil
  • 1 cup sugar
  • 3 cups all-purpose flour
  • 1 cup mini semisweet chocolate chips
  • 1 cup coarsely chopped almonds
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a cookie sheet.
  • In a mixing bowl, combine eggs, oil, sugar, and vanilla extract until fully incorporated. In a separate bowl, sift together flour, salt, and baking powder, then add to the egg mixture and mix well. Gently fold in chocolate chips and almonds. Shape the dough into two 3-inch diameter logs and transfer onto baking sheets.
  • After baking in the preheated oven for 25 minutes, slice the dish into 1-inch diagonal slices, place them on their sides on the cookie sheet, and bake for an additional 10 minutes. Transfer to a wire rack to cool.
