Mom's Mexican Cornbread

Savory cornbread packed with beef, corn, cheese, and jalapenos.
Ingredients:
  • 1 pound ground beef
  • 1 (14.5 ounce) can cream-style corn
  • 1 cup shredded Cheddar cheese
  • 2 jalapeno peppers, chopped
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat a 9x12 inch baking dish with cooking spray.
  • Preheat a large skillet over medium heat and brown the ground beef until cooked through. Remove from the skillet and set aside.
  • Combine cornmeal, salt, and baking soda in a large bowl. Add milk, egg, onion, corn, Cheddar cheese, jalapeno pepper, and browned beef. Transfer mixture to a baking dish.
  • Bake until beautifully golden brown for approximately 1 hour in the preheated oven.
