Elevate dinner with quick and flavorful pan-fried pork chops using a homemade dry rub.
Ingredients:
  • For Dad's dry rub (makes 1/2 cup):
  • 1/4 cup cumin seeds
  • 3 tablespoons whole black peppercorns
  • 1 tablespoon coriander seeds
  • 2 tablespoons sugar
  • 1 1/2 teaspoons sea salt
  • For the pork chops:
  • 4 pork chops (bone-in or boneless)
  • 1 teaspoon bacon fat or extra virgin olive oil
  • Salt
  • 1 to 2 teaspoons dry rub
Instructions:
  • To create the dry rub: In a heavy medium skillet, toast cumin, peppercorns, and coriander until fragrant over medium heat for about 8 minutes. Allow them to cool slightly. Grind the toasted spices into a fine powder using a blender, spice grinder, or mortar and pestle. Transfer the ground spices to a small bowl and mix in sugar and salt.
  • Prepare the pan and the pork: Heat a large cast iron frying pan over medium-high to high heat until hot enough to sear the meat (a drop of water should sizzle and evaporate immediately). If using bone-in chops, score the fat with a few vertical cuts to prevent buckling. Sprinkle about 1/8 teaspoon of dry rub spices on each pork chop, then rub the spices into the meat with your fingers. Flip the pork chops and repeat on the other side.
  • Heat the pan with a teaspoon of oil. Season the pork chops with salt, then arrange them in the pan ensuring they are not overcrowded. Place the thickest parts towards the center for even cooking. If needed, cook in batches to avoid overcrowding.
  • Sear the pork chops for 2 minutes per side until browned. If using a cast iron pan, turn off the heat after flipping to use the residual heat for cooking.
  • If using thick chops, cover pan and let them finish cooking for about 5 minutes until firm to the touch or until the internal temperature reaches 145°F. Enjoy!
