Mom's Potato Latkes

Crispy potato latkes, a year-round favorite and a cherished family recipe.
Ingredients:
  • 3 cups shredded potato
  • 0.25 cup grated onion
  • 2 large eggs, beaten
  • 6 saltine crackers, or as needed, crushed
  • 0.5 teaspoon salt, or more to taste
  • 0.5 cup vegetable oil, or as needed
Instructions:
  • Combine potatoes, onions, eggs, crushed crackers, salt, and pepper in a spacious bowl.
  • Warm up 1/4 inch of oil in a sturdy skillet over medium-high heat.
  • Spoon potato mixture into hot oil, pressing against the bowl to remove excess liquid. Flatten latkes with the back of a spoon for even thickness.
  • Fry the latkes in batches in hot oil until they are golden brown and crispy, for about 3 to 5 minutes on each side. Place the latkes on a paper towel-lined plate to drain off excess oil.
