"Vibrant potato salad bursting with beets, carrots, and tangy sauerkraut."
Ingredients:
  • 5 small beets
  • 2 potatoes
  • 1 carrot, peeled
  • 0.25 cup chopped onion
  • 1 dill pickle, chopped
  • 0.5 cup sauerkraut, drained
  • 3 tablespoons olive oil
  • salt to taste
Instructions:
  • In a saucepan, add beets, potatoes, and carrot, cover with water, and let it boil. Simmer until soft for approximately 20 minutes. Cool down the vegetables, peel the beets and potatoes. Dice the beets, potatoes, and carrot, put them in a salad bowl. Mix in onion, pickle, sauerkraut, olive oil, and salt. Refrigerate the salad for 2 to 3 hours before serving cold.
