Mom's Sausage and Cornbread Dressing

Indulge in a classic holiday dish with savory sausage and flavorful cornbread dressing!
Ingredients:
  • 1 package of giblets from a turkey, chopped
  • 2 cups water
  • 1 (8.5 ounce) package corn muffin mix (such as Jiffy®)
  • 0.5 cup milk
  • 5 eggs, divided
  • 2 tablespoons shortening, melted
  • 3 pounds hot Italian sausage
  • 6 cups diced celery, or more to taste
  • 1 large white onion, diced
  • 0.5 cup diced hot peppers
  • 1 (14 ounce) can turkey broth
  • 1 cup dry bread crumbs
  • 3 tablespoons dried sage
  • 1 teaspoon salt, or to taste
  • 1 teaspoon ground black pepper, or to taste
Instructions:
  • First, bring the water in a saucepan to a rolling boil. Gently add the giblets and let them simmer for 10 to 15 minutes. Take out the giblets and carefully discard them, but save the flavorful water for later use.
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and generously grease an 8-inch square baking pan.
  • In a bowl, combine corn muffin mix, milk, egg, and shortening. Pour the mixture into the prepared baking pan.
  • Bake in the preheated oven for 15-20 minutes until beautifully golden brown, then allow it to cool.
  • - Preheat a large skillet over medium-high heat. - Cook and stir sausage in the skillet until browned and crumbly, for 5 to 7 minutes. - Add celery, onion, and hot peppers and cook for an additional 3 to 5 minutes. - Drain and discard excess grease. - Transfer the sausage mixture to a large mixing bowl.
  • Preheat your oven to 350°F (175°C) and generously grease a 9x13-inch casserole pan.
  • Combine giblet water, turkey broth, bread crumbs, cornbread, remaining eggs, sage, salt, and black pepper with the sausage mixture in the mixing bowl. Mix thoroughly and transfer to the prepared casserole pan.
  • Bake in the preheated oven for about 45 minutes until golden brown with darker edges, checking periodically. Allow to cool for 10 to 15 minutes before serving.
