Delicious holiday stuffing with toasted Italian bread, 2 sausages, and fragrant herbs.
Ingredients:
  • 1 loaf soft Italian bread
  • 0.5 cup salted butter
  • 0.75 pound mild Italian sausage links, casings removed
  • 0.75 pound andouille sausage links, casings removed
  • 2 cups diced yellow onion
  • 2 cups diced celery
  • 4 cloves garlic, minced
  • 0.25 cup minced fresh sage
  • 1 tablespoon minced fresh rosemary
  • 1 tablespoon minced fresh thyme
  • 1 teaspoon poultry seasoning
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 4 cups low-sodium chicken broth, divided
  • 1 medium orange, zested and juiced, divided
  • 3 large eggs
  • 0.25 cup minced fresh Italian parsley
  • 1 (10 ounce) package dry bread stuffing mix
  • 0.25 cup dried cranberries, or more to taste
Instructions:
  • Preheat the oven to 275°F (135°C) to create the perfect cooking environment for your dish.
  • Cut bread into bite-sized 3/4-inch cubes and layer evenly on a baking sheet with raised edges.
  • Keep your kitchen cozy with the warm, toasty aroma filling the air by baking in the preheated oven for approximately 45 minutes, stirring occasionally. Remember to leave the oven on for the next step.
  • In a large Dutch oven over medium-high heat, melt butter until foaming (about 2 minutes without burning). Add Italian and andouille sausages, breaking them into fine pieces. Cook until just a few pink bits remain, about 8 minutes.
  • Sauté onion, celery, garlic, sage, rosemary, thyme, poultry seasoning, salt, and pepper until veggies are soft (about 7 minutes). Take off heat and mix in 2 cups chicken broth, orange juice, and 1 tablespoon orange zest.
  • Combine 2 cups of chicken broth, eggs, and parsley in a bowl, whisk until mixed. Gradually add the sausage mixture. Gently mix in the toasted bread cubes, stuffing mix, and dried cranberries. Transfer the mixture to a buttered 9x13-inch baking dish and cover tightly with foil.
  • Bake for about 45 minutes until the thermometer reads 150°F (66°C). Uncover and bake for an additional 10 minutes until crispy and golden brown on top.
  • Allow the dish to cool for 5 minutes after removing it from the oven. Optional: garnish with extra parsley before serving.
