Mom's Scalloped Potato Gratin

Chef John's mom's potato gratin is flavorful and lighter, a perfect complement to any main dish.
Ingredients:
  • 2 tablespoons unsalted butter, at room temperature
  • 3 large russet potatoes, or more to taste
  • kosher salt and freshly ground black pepper to taste
  • 1 pinch cayenne pepper, or to taste
  • 0.75 cup grated sharp white Cheddar cheese
  • 3.5 cups whole milk
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and generously coat a 2-quart casserole dish with 2 tablespoons of butter.
  • Slice potatoes at a 45-degree angle into 1/4-inch thick rounds after peeling.
  • Layer 1/3 of the potato slices in the dish, sprinkle generously with salt, black pepper, and cayenne (if using), and top with 1/3 of the Cheddar cheese. Repeat layers twice more. Gently pour in milk, ensuring it almost covers the potatoes without disturbing the layers.
  • Sprinkle the remaining Cheddar cheese on top and set the casserole dish on a sheet pan to catch any drips.
  • Place in the middle of the preheated oven and bake until the potatoes are tender, the top is golden brown, and it's bubbling, for approximately 1 hour and 15 minutes. Allow to rest for 10 minutes before serving.
