Mom's Spelt Bread

Gluten-free homemade bread made with whole grain and white spelt flour.
Ingredients:
  • 3.5 cups whole grain spelt flour
  • 3 cups white spelt flour, or more as needed
  • 2 cups very warm water
  • 0.5 cup canola oil
  • 0.25 cup white sugar
  • 4 teaspoons active dry yeast
  • 2.5 teaspoons salt
Instructions:
  • Combine 3 1/2 cups whole grain spelt flour, 3 cups white spelt flour, water, oil, sugar, yeast, and salt in a bowl, mixing with a spoon until mostly blended. Transition to hand-kneading, incorporating additional white spelt flour as needed. Knead until the dough resembles the texture of your earlobe.
  • Shape the dough into a loaf on parchment paper and let it rise until doubled in size, approximately 1 hour.
  • Preheat your oven to 375°F (185°C).
  • Bake in the oven until the top is a deep golden brown and the bread sounds hollow when tapped, approximately 20 minutes.
