Cheesy baked squash with savory mushrooms, onions, and a crispy crouton topping.
Ingredients:
  • 2 pounds yellow squash, chopped
  • 1 onion, chopped
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 2 cups shredded Cheddar cheese
  • 2 eggs, beaten
  • 1.5 cups seasoned croutons
Instructions:
  • Preheat oven to 350°F (175°C) for the perfect bake.
  • - Boil a pot of generously salted water until bubbling. Drop in the squash and onion, and simmer until just tender with a slight crunch, approximately 15 minutes. Drain well, then delicately move the vegetables into a 2-quart casserole dish.
  • Mix together the soup, cheese, and eggs in a medium bowl until well combined. Pour the mixture over the squash in the dish.
  • Preheat your oven and bake for 25 minutes. Sprinkle croutons on top, then return to bake for an additional 20 minutes.
