"Traditional Japanese sushi rice with subtle flavor from konbu kelp. Easy, tasty, and authentic!"
Ingredients:
  • 2.25 cups Japanese sushi-style rice
  • 1 (4 inch) piece konbu dried kelp
  • 3 cups water
  • 0.25 cup rice vinegar
  • 1.25 teaspoons salt
Instructions:
  • In a large bowl, add rice and cover with cold water. Gently rub the rice between your hands until the water becomes cloudy. Carefully pour out the cloudy water, keeping the rice in the bowl. Repeat this process 3 to 4 times until the water is clear enough to see the rice through about 3 inches of water.
  • Strain rice in a fine mesh sieve, transfer to a saucepan with konbu, and add 3 cups water. Let it stand for 30 minutes. Combine rice vinegar, sugar, and salt in a small bowl, mix until dissolved, and set aside.
  • Bring rice to a vigorous boil, then lower heat and simmer for 15 minutes. Let it sit, covered, for an additional 5 minutes before serving.
  • Transfer the rice to a bowl, discarding the konbu. Mix in the vinegar mixture until the rice is smooth. Let it cool at room temperature. For a glossy finish, speed up the cooling process with an electric fan.
