Sweet carrot, prune, and potato side dish, perfect for Rosh Hashanah and Passover.
Ingredients:
  • 12 ounces pitted prunes
  • 2 large potatoes, peeled and cut into chunks
  • 3 carrots, peeled and sliced into rounds
  • 1.5 teaspoons lemon juice
  • 2 tablespoons matzo meal
Instructions:
  • In a large saucepan, combine prunes with water just enough to cover them. Meanwhile, peel and cut the potatoes and carrots. Add the potatoes, carrots, lemon juice, and sugar to the pan. Bring to a boil, then reduce heat and simmer for about 1 hour until carrots are very tender and the mixture thickens, stirring every 20 minutes.
  • For a richer tzimus, simply mix in the matzo meal and let it simmer for another 30 minutes.
