Spice up your meal with zesty horseradish carrots - perfect for any occasion!
Ingredients:
  • 0.5 teaspoon salt (scant)
  • 1.25 pounds carrots, cut into matchsticks
  • 0.5 cup mayonnaise
  • 2 tablespoons grated onion
  • 2 tablespoons freshly ground horseradish
  • 0.25 teaspoon ground black pepper (scant)
  • 0.25 cup dry seasoned bread crumbs
  • 2 tablespoons melted butter
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect baking temperature.
  • In a pot, combine carrots with enough water to cover them completely. Bring to a boil, then simmer until tender, about 6 to 8 minutes. Drain the carrots, saving 1/4 cup of the cooking liquid. Transfer the carrots to a shallow baking dish.
  • Combine the reserved cooking water, mayonnaise, onion, horseradish, salt, and pepper in a small bowl until well mixed, then pour over the carrots.
  • Place in the hot oven and bake for 15 minutes.
  • Drizzle melted butter over bread crumbs, ensuring they are fully coated. Sprinkle the buttery crumbs over the carrots and bake until golden and crispy, for an extra 3 to 5 minutes.
