Moist zucchini bread with cinnamon, vanilla, and crunchy walnuts. Easy to bake and irresistibly delicious.
Ingredients:
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 3 large eggs
  • 1 cup vegetable oil
  • 2.25 cups white sugar
  • 3 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and prepare two 8x4-inch pans by greasing and flouring them.
  • Combine flour, salt, baking powder, baking soda, and cinnamon in a large bowl, sifting them together.
  • Using an electric mixer, blend eggs, oil, sugar, and vanilla in a large bowl until combined. Add flour mixture and mix well. Fold in zucchini and walnuts until fully incorporated. Transfer batter into the prepared pans.
  • Bake in the preheated oven for 40-60 minutes or until a toothpick comes out clean. Cool in the pans on a wire rack for 20 minutes, then loosen the edges with a knife, carefully invert onto a wire rack, and let cool completely.
