Crispy zucchini pancakes with Parmesan and green onion, pan-fried to golden perfection. Perfect for a tasty side or snack!
Ingredients:
  • 2 cups grated zucchini
  • 2 large eggs, slightly beaten
  • 2 tablespoons chopped green onion
  • 0.5 cup all-purpose flour
  • 0.25 cup grated Parmesan cheese
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 pinch dried oregano
  • 0.25 cup vegetable oil, or as needed
Instructions:
  • Pat dry grated zucchini to remove excess moisture. Combine zucchini, eggs, and green onion in a large bowl. In another bowl, whisk together flour, Parmesan cheese, baking powder, salt, and oregano. Gently fold the flour mixture into the zucchini mixture until just combined.
  • In a large skillet over medium-high heat, heat oil until shimmering. Spoon zucchini batter into the hot oil, fry until golden brown for 2 to 3 minutes on each side. Place cooked pancakes on a paper towel-lined plate to drain excess oil.
