Mom G's Cranberry Jell-O Salad

Festive holiday salad with cranberries, pineapple, walnuts, and zesty lemon gelatin.
Ingredients:
  • 2 (3 ounce) packages lemon-flavored gelatin mix (such as Jell-O®)
  • 1.5 cups boiling water
  • 2 cups cold water
  • 1 (12 ounce) package fresh cranberries
  • 1 cup crushed pineapple, drained
  • 0.75 cup chopped celery
  • 0.5 cup chopped walnuts
Instructions:
  • In a bowl, mix lemon gelatin with boiling water until dissolved. Then add cold water and refrigerate until slightly thickened, for 30 to 40 minutes.
  • In a food processor, finely chop cranberries. Add sugar and pulse a couple of times to combine. Allow the cranberry mixture to sit for a few minutes to dissolve the sugar. Mix in pineapple, celery, and walnuts. Transfer the mixture into a gelatin mold or serving dish and chill until completely set, approximately 4 hours. Enjoy!
