Mom-Mom Kolar's Chocolate Rum Pie

Indulge in a decadent chocolate rum pie passed down from my grandmother.
Ingredients:
  • 0.5 cup white sugar
  • 1 (.25 ounce) envelope unflavored gelatin
  • 1 pinch salt
  • 1 cup whole milk
  • 2 large egg yolks
  • 1 (6 ounce) package semi-sweet chocolate chips
  • 0.3 cup dark rum
  • 0.25 cup sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 (9 inch) pie shell, baked
Instructions:
  • In a saucepan, mix 1/2 cup sugar, gelatin, and salt. Pour in milk and egg yolks. Cook over low heat, stirring constantly until slightly thickened, for 3 to 5 minutes. Remove from heat, toss in chocolate pieces, and stir until melted. Stir in rum until fully combined. Refrigerate until partially set, approximately 1 hour.
  • Using an electric mixer, beat chilled egg whites in a glass or metal bowl until soft peaks form. Gradually add 1/4 cup sugar and beat until stiff peaks form. Gently fold the fluffy egg whites into the chocolate mixture.
  • In a chilled glass or metal bowl, use an electric mixer to beat cream and vanilla extract until stiff peaks form. Layer the whipped cream and chocolate mixture into the pie shell, then swirl the top with a fork to marbleize.
  • Allow the pie to chill in the refrigerator until it becomes firm, for 1 to 2 hours.
