Momma's Fresh Fig Preserves

Delicious fig preserves with a hint of cinnamon and ginger, perfect on biscuits, toast, or a cream cheese bagel.
Ingredients:
  • 6 cups quartered fresh figs
  • 3 cups white sugar
  • 1 tablespoon lemon juice
  • 0.5 teaspoon grated fresh ginger
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon salt
Instructions:
  • Combine figs, sugar, lemon juice, ginger, cinnamon, vanilla, and salt in a saucepan over medium heat until simmering. Reduce heat and simmer gently, stirring occasionally, until thickened, about 3 to 4 hours.
  • Check 5 or 6 half pint-sized jars for cracks and rust on rings, discarding any defective ones. Place them in simmering water while making fig preserves. Wash new lids and rings with warm soapy water.
  • Fill hot, sterilized jars with fig preserves, leaving 1/4 inch space at the top. Remove air bubbles by running a clean knife around the inside of the jars. Wipe rims clean with a moist paper towel. Secure lids tightly by screwing rings on top.
  • Fill a large stockpot halfway with water and bring to a boil. Use a holder to carefully lower jars 2 inches apart into the boiling water. Pour in additional boiling water to ensure jars are covered by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • After boiling, take out the jars and let them cool, spaced out, for 12 to 24 hours. Press the center of each lid gently to check if it's sealed properly. Remove the rings and keep the jars in a cool, dark place for storage.
