Delicious oatmeal cookies packed with wheat germ, coconut, pecans, and dates.
Ingredients:
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 2 eggs
  • 1.5 teaspoons vanilla extract
  • 1.5 cups rolled oats
  • 1 cup wheat germ
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup flaked coconut
  • 2 cups chopped pecans
  • 1 cup chopped pitted dates
Instructions:
  • Preheat your oven to 325°F (165°C) for the perfect cooking temperature.
  • In a large bowl, mix butter, white sugar, and brown sugar until smooth. Add eggs one at a time, then stir in vanilla. In a separate bowl, combine oats, wheat germ, flour, baking powder, baking soda, and salt. Gently fold dry ingredients into the creamed mixture. Stir in coconut, pecans, and dates. Using a rounded spoon, drop dough onto ungreased cookie sheets.
  • Bake in the preheated oven for 8 to 10 minutes until lightly browned with set edges. Let the cookies cool on the baking sheet briefly then transfer to a wire rack to cool completely.
