Effortlessly make a delicious mango cobbler, perfect with a dollop of ice cream.
Ingredients:
  • 8 mangoes - peeled, seeded, and sliced
  • 2 cups water
  • 0.5 cup white sugar
  • 2 cups white sugar
  • 0.5 cup butter, softened
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 0.25 teaspoon salt
  • 1 cup milk
  • 1 tablespoon vanilla extract
Instructions:
  • Preheat oven to 375°F (190°C) for a perfectly heated cooking environment.
  • In a saucepan over medium heat, let the captivating blend of mangoes, water, and 1/2 cup of sugar simmer until the sugar dissolves, which usually takes about 5 to 6 minutes. Then separate the sweet syrup from the mangoes, saving the syrup for later use.
  • In a bowl, cream together 2 cups of sugar and butter using an electric mixer until smooth and creamy. In a separate bowl, whisk together flour, baking powder, and salt until combined. Slowly mix the flour mixture into the creamed butter mixture, alternating with milk, beating well after each addition. Stir in vanilla extract and pour the batter into a 9x13-inch baking dish.
  • Place the mango slices on top of the batter, then drizzle 2 cups of the reserved syrup over the mangoes.
  • Bake until a toothpick inserted in the cobbler's center comes out clean, 40-45 minutes in the preheated oven.
