Indulge in a refreshing summer strawberry pie topped with fluffy whipped cream.
Ingredients:
  • 1 (9 inch) prepared pie crust
  • 0.66666668653488 cup water
  • 0.33333334326744 cup pureed strawberries
  • 1 cup white sugar
  • 1 (3 ounce) package strawberry flavored Jell-O®
  • 2 tablespoons cornstarch
  • 0.25 teaspoon salt
  • 2 pints strawberries, cleaned and stemmed
Instructions:
  • Preheat the oven to 400 degrees F (205 degrees C) and line the pastry with a double layer of aluminum foil and pie weights or dried beans.
  • Bake in the preheated oven until the crust's edge turns golden, for around 10 minutes. Remove foil and weights, then continue baking until the crust is set, for about 5 minutes more. Let the crust cool.
  • In a saucepan, combine water and pureed strawberries and bring to a gentle boil. Stir in sugar, gelatin, cornstarch, and salt until fully dissolved, about 2 to 3 minutes, while stirring continuously.
  • Place the fresh strawberries neatly in the pie crust, then generously pour the gelatin mixture over the fruits. Refrigerate until the gelatin becomes firm, ideally overnight for best results.
