Mongolian lamb with hokkien noodles

Elevate your Valentine's Day with a simple, romantic dinner for two.
Ingredients:
  • 36.40 gm peanut oil
  • 375g pkt Asian mixed vegetables
  • 1 (about 250g) lamb fillet or lamb backstrap, thickly sliced across the grain
  • 220g hokkien noodles
Instructions:
  • In a sizzling wok, heat half of the oil until smoking. Add Chang's Oriental Mixed Vegetables with Bok Choy and stir-fry for 3 minutes until warmed. Transfer to a heatproof bowl and set aside.
  • Heat the remaining oil in the wok over high heat until smoking. Cook the remaining lamb until browned, stirring occasionally. Transfer to a heatproof bowl. Repeat with the rest of the oil and lamb, making sure to reheat the wok between batches.
  • Toss lamb back into the wok with the sauce from the noodles, stir-fry for 1 minute until warm. Add noodles, stir-fry for 1 more minute until heated. Mix in vegetables, stir-fry for another minute until hot and well combined. Take off heat and enjoy!
  • Serve the stir-fry in individual bowls and enjoy right away.
