"Wholesome monster cookie bars filled with oats, peanut butter, and chocolate chips, baked effortlessly on a sheet pan for a full batch."
Ingredients:
  • 1 cup all-purpose gluten-free flour
  • 1 cup gluten-free quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup light brown sugar, packed
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup M&Ms
  • 1 cup chocolate chips
Instructions:
  • Preheat the oven to 350°F. Line the jelly roll pan with parchment paper, allowing a 1-inch overhang on the two long sides for easy bar removal.
  • Whisk together gluten-free flour, oats, salt, and baking soda in a medium bowl to combine the dry ingredients.
  • Mix the wet ingredients: In a separate large bowl, whisk together the butter, brown sugar, peanut butter, egg, and vanilla until smooth and well combined.
  • Mix dry ingredients into wet ingredients, adding all M&Ms and chocolate chips except for 2 tablespoons of each. Stir until well combined.
  • Spread dough in baking pan: Gently press dough into prepared pan using parchment paper. Sprinkle reserved M&Ms and chocolate chips on top, pressing slightly into the dough.
  • Bake the cookie bars for 15-17 minutes, until the dough rises and the edges are slightly golden. The center may look underdone, but it will firm up as it cools.
  • Allow the cookie bars to cool thoroughly by placing the baking pan on a rack for at least 1 hour.
  • Transfer the sheet pan cookie to a board using the parchment sling and cut into 24 bars before serving.
