Pennsylvania Dutch Montgomery Pie: A delightful duo of rich molasses and creamy buttermilk custard layers.
Ingredients:
1recipepastry for a 9 inch single crust pie
0.5 cupwhite sugar
2tablespoons all-purpose flour
0.5 cupmolasses
1egg
1cupwater
3tablespoons fresh lemon juice
1tablespoonlemon zest
0.66666668653488 cupwhite sugar
0.25 cupbutter, room temperature
1egg, beaten
1.25 cups all-purpose flour
0.5 teaspoonbaking soda
0.5 cupbuttermilk
Instructions:
Preheat the oven to 375°F (190°C).
Mix 1/2 cup sugar with 2 tablespoons flour until well combined. Add molasses, egg, 1 cup water, lemon juice, and lemon zest. Stir until fully incorporated, then pour into pie shell.
Cream together the butter and 2/3 cup of white sugar until light and fluffy. Mix in the beaten egg. Combine 1 1/4 cups of flour and baking soda, then add to the creamy mixture along with the buttermilk. Spread the mixture over the pie shell.
Simply bake in the preheated oven for 35 to 40 minutes, until the filling is set.
