Pennsylvania Dutch Montgomery Pie: A delightful duo of rich molasses and creamy buttermilk custard layers.
Ingredients:
  • 1 recipe pastry for a 9 inch single crust pie
  • 0.5 cup white sugar
  • 2 tablespoons all-purpose flour
  • 0.5 cup molasses
  • 1 egg
  • 1 cup water
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 0.66666668653488 cup white sugar
  • 0.25 cup butter, room temperature
  • 1 egg, beaten
  • 1.25 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 cup buttermilk
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Mix 1/2 cup sugar with 2 tablespoons flour until well combined. Add molasses, egg, 1 cup water, lemon juice, and lemon zest. Stir until fully incorporated, then pour into pie shell.
  • Cream together the butter and 2/3 cup of white sugar until light and fluffy. Mix in the beaten egg. Combine 1 1/4 cups of flour and baking soda, then add to the creamy mixture along with the buttermilk. Spread the mixture over the pie shell.
  • Simply bake in the preheated oven for 35 to 40 minutes, until the filling is set.
