Moore's Cranberry Gelatin Salad

Tangy cranberry fruit salad pairs perfectly with turkey, chicken, or ham. Enhance with refreshing pineapple juice for added flavor.
Ingredients:
  • 2 (3 ounce) packages raspberry flavored Jell-O® mix
  • 2 cups boiling water
  • 1.5 cups cold water
  • 1 pound cranberries
  • 1 orange
  • 1.5 cups crushed pineapple, drained
  • 2 cups seedless red grapes, halved
  • 1.5 cups diced apples
Instructions:
  • Combine sugar with gelatin. Mix in boiling water until gelatin is fully dissolved. Stir in cold water or pineapple juice. Refrigerate until gelatin sets.
  • Pulse the cranberries and orange in a food processor until finely ground.
  • Stir in the ground cranberry mixture, drained crushed pineapple, grapes, and cubed apples into the thickened gelatin. Transfer the mixture into a 9 x 13 inch pan or a large bowl. Chill in the refrigerator overnight before serving.
