Award-winning chicken stew with aromatic spices, vegetables, served over whole-grain couscous.
Ingredients:
  • 1 cup whole wheat couscous
  • 1 medium onion, chopped
  • 2 bay leaves
  • 5 whole cloves, crushed
  • 0.5 teaspoon cinnamon
  • 1 teaspoon ground dried turmeric
  • 0.25 teaspoon ground cayenne pepper
  • 6 skinless, boneless chicken breast halves - chopped
  • 1 (16 ounce) can garbanzo beans
  • 1 (16 ounce) can crushed tomatoes
  • 1 (48 fluid ounce) can chicken broth
  • 2 carrots, cut into 1/2 inch pieces
  • 1 zucchini, cut into 1/2-inch pieces
  • salt to taste
Instructions:
  • Cook the couscous as instructed on the package.
  • 1. Heat oil in a large pot over medium heat and sauté onions until tender. Stir in bay leaves, cloves, cinnamon, turmeric, and cayenne pepper. Add chicken and brown well. Pour in garbanzo beans, tomatoes, and broth. Bring to a boil, then simmer on low for 25 minutes.
  • Combine the carrots and zucchini in a pot, season with salt, and cook for 10 minutes or until the vegetables are tender. Serve the flavorful stew over cooked couscous.
