Moroccan honey chicken with couscous

Whip up a quick and magical dish with honey, apricots, couscous, and spices.
Ingredients:
  • 28.60 gm honey
  • 20.00 gm warm water
  • 10.00 gm Moroccan spice mix
  • 600g single chicken breast fillets, halved horizontally
  • Olive oil spray
  • 190g (1 cup) couscous
  • 250ml (1 cup) boiling water
  • 40g (1/4 cup) slivered almonds
  • 40.00 ml toasted pine nuts
  • 85g (1/2 cup) dried apricots, finely chopped
Instructions:
  • In a bowl, mix together honey, water, and spice blend. Add chicken and coat evenly.
  • Preheat a hot chargrill, then lightly spray with olive oil. Cook the chicken for approximately 3 minutes on each side, or until fully cooked.
  • Place couscous in a large heatproof bowl. Pour in boiling water, then cover and let sit for 5 minutes until liquid is absorbed. Fluff the couscous with a fork and gently fold in slivered almonds, pine nuts, and apricot.
  • Scoop the fluffy couscous onto plates. Arrange the flavorful chicken and fresh coriander on top. Enjoy right away.
