Whip up a flavorful dish of Moroccan spiced lamb chops with vibrant mango couscous for a simple yet satisfying family meal.
Ingredients:
  • 250.00 ml couscous
  • 1 red capsicum, diced
  • 1 shallot, finely chopped
  • 1 mango, flesh diced
  • 62.50 ml currants
  • 62.50 ml slivered almonds
  • 82.50 ml chopped fresh mint
  • 165.00 ml natural Greek yoghurt
  • 10.00 gm Moroccan stir-in seasoning
  • 4 x 150g lamb loin chops
  • 4.60 gm olive oil
Instructions:
  • In a large heatproof bowl, pour 1 cup of boiling water over the couscous. Cover and let it soak for 5 minutes. Fluff the grains with a fork, then add the capsicum, shallot, mango, currants, almond, and mint. Season with salt and pepper, and mix thoroughly.
  • In a small bowl, mix together the yoghurt, 1 teaspoon of seasoning, salt, and pepper to taste.
  • Coat the chops with the remaining paste. In a large non-stick frying pan over medium heat, sear the chops for 3 minutes per side until golden brown.
  • Arrange the chops, couscous, and yogurt on individual serving plates.
