Satisfy your crowd with zesty Moroccan lamb sliders topped with tangy feta and pickled red onion, a collaboration between Lemnos and Taste.
Ingredients:
  • 1 large red onion, thinly sliced
  • 60ml red wine vinegar
  • 20.00 gm caster sugar
  • 2.40 gm sea salt flakes
  • 400g lamb mince
  • 2.50 gm ground cinnamon
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground allspice
  • 9.20 gm olive oil
  • 12 small soft bread rolls, split
  • 100g Smooth Feta, crumbled
  • 62.50 ml round mint leaves
  • 62.50 ml coriander leaves
Instructions:
  • In a medium bowl, mix together the onion, vinegar, sugar, and salt. Let it marinate for 30 minutes, then drain thoroughly.
  • Combine lamb with a blend of cinnamon, cumin, coriander, and allspice in a bowl. Use your hands to mix well. Divide into 12 portions and shape each into an 8cm round patty. Chill on a plate in the fridge for 30 minutes.
  • In a spacious frying pan, heat oil over medium high heat. Add lamb patties and sear each side for 3 minutes, achieving a golden brown color and thorough cooking.
  • Place the lamb patties on the bread rolls. Add onion on top and sprinkle with feta, mint, and coriander leaves. Serve promptly.
