Impress with a versatile tart paired effortlessly with savory lamb sausage rolls for a crowd-pleasing 2-in-1 meal the whole family will love.
Ingredients:
  • 400g lamb mince
  • 1 small brown onion, finely chopped
  • 1 egg, lightly beaten
  • 40.00 ml dried breadcrumbs
  • 40.00 ml finely chopped fresh flat-leaf parsley leaves
  • 20.00 ml Moroccan seasoning
  • 3 tsp finely chopped preserved lemon (see note)
  • 1 sheet reduced-fat frozen puff pastry, partially thawed
  • 40.00 ml slivered almonds
  • 1 oranges (see notes)
  • 1/2 Lebanese cucumber, thinly sliced diagonally
  • 3 radishes, trimmed, sliced
  • 30g baby spinach
  • 20.00 ml shredded fresh mint leaves
  • 27.30 gm extra virgin olive oil
  • Extra mint leaves, to serve
  • Extra coriander leaves, to serve
Instructions:
  • Mix together the ground meat, onion, egg, breadcrumbs, and parsley in a bowl. Season with your preferred spices. Set aside half of the mixture for making Lamb sausage rolls as per the related recipe. To the remaining mixture, add seasoning and preserved lemon. Mix well to combine.
  • Preheat your oven to a toasty 220°C/200°C fan-forced and get that baking tray all cozy with a sheet of baking paper.
  • Cut the pastry sheet into 4 squares and place them in a single layer on a baking tray. Pinch the edges of the pastry to create a border. Divide the spiced mince mixture between the squares, spreading it evenly. Sprinkle with almonds. Bake for 20 minutes until the pastry is golden and puffed and the filling is cooked.
  • Garnish tarts with additional mint and coriander leaves.
  • Create a colorful display of radish, baby spinach, mint, orange slices, and cucumber on plates. Drizzle with a delightful mix of 1 tablespoon orange juice and 1 tablespoon oil, then season generously with salt and pepper.
