Ingredients:
  • 2 garlic cloves, crushed
  • 5.00 gm sweet paprika
  • 40.00 ml sumac*
  • 2 tsp dried oregano
  • 54.60 gm (1/4 cup) olive oil
  • 12 French-trimmed lamb cutlets
  • 4 carrots, peeled, thinly sliced
  • 5.00 gm cumin
  • 62.50 ml chopped flat-leaf parsley
  • 2 tsp harissa* (optional)
  • 20.00 ml red wine vinegar
  • 95g kalamata olives
  • 6 radishes, thinly sliced
  • Greek Style Yoghurt, to serve
Instructions:
  • Mix together minced garlic, flavorful paprika, tangy sumac, fragrant oregano, 1 tablespoon of oil, and 2 tablespoons of water to create a delicious marinade. Massage the mixture onto the cutlets and let them marinate.
  • Boil carrots briefly. Mix cumin, parsley, harissa, oil, vinegar, and water. Drain carrots and coat with dressing, olives, and radishes. Grill lamb quickly until cooked. Serve with salad and a spoonful of yogurt.
