Enhance meatloaf with mint, paprika, cumin, and curry for a flavorful Moroccan twist using both lamb and beef.
Ingredients:
  • 1 medium yellow onion, chopped
  • 1 large carrot, peeled and chopped
  • 1 large stalk celery, chopped
  • 6 cloves garlic, chopped
  • 1 (3 inch) piece fresh ginger, minced
  • 1.25 teaspoons kosher salt
  • 1 teaspoon sweet paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon curry powder
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon freshly ground black pepper
  • 2 pounds ground lamb
  • 1 pound ground beef
  • 1.25 cups dry bread crumbs
  • 0.25 cup chopped fresh cilantro
  • 2 tablespoons chopped fresh mint
  • 1.5 cups ketchup
  • 0.25 medium yellow onion, minced
  • 1 tablespoon pomegranate molasses
  • 1/2 medium chipotle pepper in adobo sauce, minced
  • 1.5 teaspoons adobo sauce from chipotle peppers
  • 0.5 teaspoon white sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) for the perfect cooking temperature.
  • In a large skillet, heat olive oil over medium-high heat. Add onion, carrot, celery, garlic, and ginger. Sauté until onion is translucent, around 5 minutes. Add salt, paprika, cumin, curry powder, cayenne, cinnamon, and black pepper. Cook briefly for 1 to 2 minutes to enhance flavors. Take skillet off the heat and allow it to cool for 10 to 15 minutes.
  • Place the lamb and beef in a large bowl, then mix in the cooled vegetable mixture until combined. Add the bread crumbs, cilantro, eggs, and mint, and mix well.
  • Spoon the meatloaf mixture into a 1 1/2-quart loaf pan and place it in a baking pan. Fill the baking pan with water until it reaches halfway up the sides of the loaf pan.
  • Bake in the oven until firm and fully cooked, approximately 1 1/2 hours. Use an instant-read thermometer to ensure the center reaches 160°F (70°C). Rest for 10 to 15 minutes before serving.
  • Prepare the BBQ sauce by combining ketchup, onion, molasses, chipotle pepper, adobo sauce, and sugar in a small saucepan over low heat. Simmer for about 5 minutes until flavors combine. Let cool to room temperature before using.
  • Gently release the meatloaf onto a spacious plate, slice it, and serve alongside the sauce.
