Indulge in a modern twist on a traditional Greek favorite with a luscious bechamel topping.
Ingredients:
  • 56.88 gm extra virgin olive oil
  • 1 large eggplant, cut into 2cm cubes
  • 1 large brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 600g lamb mince
  • 1 tsp ground allspice
  • 1.25 gm ground nutmeg
  • 2 x 400g cans chopped tomatoes
  • 200g dried tubular spaghetti
  • 125.00 ml parmesan, finely grated
  • 60g butter
  • 82.50 ml plain flour
  • 515.00 gm milk
Instructions:
  • Preheat your oven to 200C/180C fan-forced and lightly grease a 6cm-deep, 20cm x 28cm baking dish with a 10-cup capacity.
  • In a hot frying pan, sauté eggplant in 2 tablespoons of oil until tender. Then add onion and cook until softened, followed by garlic until fragrant. Transfer the flavorful mixture to a bowl.
  • In a pan over medium-high heat, warm up the rest of the oil. Add the mince and cook for 6 to 8 minutes until browned, breaking it up with a wooden spoon. Add the eggplant mixture back to the pan along with allspice, nutmeg, and tomatoes. Season with salt and pepper. Bring to a boil, then reduce heat to medium-low. Simmer for 10 to 15 minutes, stirring occasionally, until the sauce thickens and the liquid evaporates.
  • While the pasta is cooking according to the package instructions, drain it and transfer it to a large bowl. Add the mince mixture and gently toss to combine.
  • Make Bechamel: Melt butter in a saucepan over medium-high heat. Add flour and cook, stirring, until bubbling (about 1 minute). Gradually stir in milk, bring to a boil, then reduce heat to medium. Cook and stir until mixture thickens and bubbles (3 to 5 minutes). Remove from heat.
  • Pour the pasta mixture into the prepared dish. Drizzle the creamy bechamel sauce evenly over the top. Sprinkle generously with grated parmesan cheese. Bake in the oven for around 30 minutes, or until the top is beautifully golden. Let it rest for 15 minutes before serving. Enjoy your delicious meal!
