Delicious and easy moussaka recipe for fans of this classic dish.
Ingredients:
  • 60ml olive oil
  • 1 brown onion, finely chopped
  • 500g 5 Star Extra Lean Beef Mince
  • 400g Brand Italian Crushed Tomatoes with Basil & Oregano
  • 18 x 1cm-thick slices eggplant
  • 80g yoghurt
  • 21.00 gm lemon juice
  • 25g parmesan
  • 60g baby spinach leaves
  • 50g mozzarella
  • Mixed salad leaves, to serve
Instructions:
  • 1. Heat 2 tsp of oil in a frying pan over medium heat. Saute onion until softened, then add garlic and cook briefly. Brown the mince while breaking up any lumps with a wooden spoon. Stir in tomato until most of the liquid evaporates.
  • Toss the eggplant slices in the remaining oil. Heat a barbecue grill or chargrill over medium heat. Cook the eggplant in batches for about 3 minutes on each side until cooked through. In a jug, mix together the yogurt, lemon juice, and Parmesan cheese. Season with salt and pepper to taste.
  • 1. Preheat the grill on high. Arrange 6 slices of eggplant on a foil-lined baking tray. Layer half of the mince, spinach, and yogurt mix over the eggplant. Repeat layering with the remaining ingredients, finishing with eggplant slices. Sprinkle with mozzarella. Grill for 2 minutes until cheese melts and stacks are warmed through. Serve with mixed salad leaves.
