Mr T Ruffle beef burger with Swiss cheese, streaky bacon and truffle oil

Introducing the mouthwatering Mr T Ruffle burger - loaded with truffle oil, crispy bacon, and gooey Swiss cheese from Bar Luca.
Ingredients:
  • 480g course ground beef (chuck/brisket blend 80:20 beef to fat ratio) 120gm per patty
  • 8 slices Swiss cheese
  • 4 Helga’s Gluten Free Gourmet Rolls Traditional White
  • 8 rashers of streaky maple bacon
  • 200g Swiss brown mushrooms
  • 10ml black truffle oil
  • 250ml whole egg mayonnaise
  • 1/2 bunch shallots
  • Course ground sea salt
Instructions:
  • In a bowl, gently loosen the beef with your fingers. Shape the meat into four evenly sized patties using your hands or a metal ring. Refrigerate the patties until ready to use.
  • Combine the mayonnaise and truffle oil, then season to taste to create a delicious sauce.
  • Cut the shallots into thin angled strips and set them aside.
  • Slice the mushrooms and sauté them in a pan until cooked. Season to taste and keep them warm.
  • Fry the bacon strips until crispy, then set aside to stay warm.
  • Preheat a cast iron pan or grill over medium-high heat. Use oiled paper towels to generously grease the pan or grill. Season one side of the patties generously and place them seasoned side down on the grill. Then, season the tops of the patties.
  • Sear the patties for 5 minutes until golden brown, then flip and cook for an additional 3 minutes.
  • Top each patty with two slices of cheese and cook for an additional minute. Rest the patties while you toast the buns.
  • Place the Helga’s Gluten Free Gourmet Rolls Traditional White on the grill, cut side down, to toast.
  • Spread a touch of sauce on the bottom bun, add the patty, layer with two strips of bacon, mushrooms, and shallots, and drizzle with extra sauce to finish.
