Irish potato candy: Sweet coconut balls coated in cinnamon, perfect for St. Patrick's Day.
Ingredients:
  • 1 cup unsalted butter, softened
  • 2 (16 ounce) packages confectioners' sugar, or to taste
  • 1 (14 ounce) package shredded coconut, or to taste
  • 0.33333334326744 cup light corn syrup (such as Karo®)
  • 2 tablespoons vanilla extract
  • 0.5 cup ground cinnamon, or as needed
Instructions:
  • In a large bowl, combine softened butter, confectioners' sugar, coconut, corn syrup, and vanilla extract. Using your hands, mix until well combined. Knead until the mixture holds together without being too sticky, adding more sugar and coconut as necessary.
  • Spread cinnamon on a plate. Shape the mixture into small balls and coat them by rolling in the cinnamon until they resemble tiny potatoes.
