Traditional Irish apple pie passed down through generations from Cork, Ireland.
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.75 cup cake flour
  • 1 tablespoon white sugar
  • 1 cup cold unsalted butter, cubed
  • 3 tablespoons shortening
  • 0.25 cup sour cream
  • 0.125 teaspoon lemon juice
  • 5 large Granny Smith apples - peeled, cored and sliced
  • 0.5 cup white sugar
  • 2 tablespoons all-purpose flour
  • 0.5 tablespoon ground nutmeg
  • 1 large egg, beaten
Instructions:
  • For the crust: In a large bowl, mix together flours, sugar, and salt. Use two knives or a pastry blender to cut in the butter and shortening until the mixture looks like coarse crumbs. Stir in sour cream and lemon juice until the dough forms, and it's alright to have some lumps. Divide the dough in half, shape each half into a disk, wrap them in plastic wrap, and refrigerate for 1 hour.
  • Preheat the oven to 350 degrees F (175 degrees C) while you generously grease a 9-inch pie dish.
  • Roll out one dough disk to perfectly fit your 9-inch pie dish. Roll out the second dough disk for the top crust and keep it to the side.
  • For the filling, gently layer the apples into the pie crust. Combine sugar, flour, and nutmeg in a small bowl, then sprinkle this mixture over the apples. Finish by drizzling lemon juice over the top.
  • Brush the outer edge of the bottom crust with beaten egg, then cover it with the top crust, trimming and crimping the edges together. Brush the top crust with more beaten egg and make 4 steam vents.
  • Bake in the preheated oven for about 45 minutes until golden brown. Let the pie cool completely before serving.
