Homemade mincemeat: a labor of love that's worth the wait!
Ingredients:
  • 1 pound suet
  • 1 pound brown sugar
  • 1 pound sultana raisins
  • 1 pound dark raisins
  • 1 pound dried currants
  • 4 ounces candied mixed fruit peel
  • 4 ounces chopped almonds
  • 0.25 cup ground allspice
  • 3 tablespoons ground nutmeg
  • 1 tablespoon salt
  • 3 pounds apples, grated
Instructions:
  • Gently melt suet in a saucepan over medium-low heat, then strain the liquid through a fine-mesh strainer into a bowl, discarding the solids. Chill the liquid until solidified again.
  • Grate the solid suet and carefully measure out 12 ounces into a bowl, then set it aside.
  • Combine brown sugar, sultana raisins, dark raisins, currants, fruit peel, almonds, allspice, nutmeg, and salt in a large bowl. Mix in grated suet, then gently fold in grated apple.
  • Loosely cover the bowl with aluminum foil and let it sit at room temperature, stirring daily, until fermented, for 3 to 5 days. Refrigerate until ready to use.
