Cozy up with a comforting slow cooker chicken soup, reminiscent of mom's homemade classic, to warm you up this winter.
Ingredients:
  • 800g chicken drumstick
  • 1 leek, white part only, halved and thinly sliced
  • 1 carrot, quartered lengthways, cut into 1cm pieces
  • 2 celery stalks, cut into 1cm-thick pieces
  • 6 sprigs fresh thyme, plus extra leaves to serve
  • 1.5 litres salt reduced chicken style liquid stock
  • 20.00 gm cornflour
  • 187.50 ml dried risoni
  • 200ml tub double thick cream
  • 2 tsp lemon zest
  • 110g packet cheddar cheese twists, to serve
Instructions:
  • In a flameproof slow cooker bowl, heat oil over medium-high heat. Sear chicken for 3 minutes on each side until golden brown. Transfer everything to the slow cooker, including leek, carrot, celery, thyme, and stock. Cover with the lid and cook on low for 4 hours until the chicken is tender.
  • With tongs, gently transfer the chicken from the slow cooker to a cutting board. In a small bowl, combine cornflour with 1/4 cup of the soup mixture and mix until smooth. Pour the cornflour mixture and pasta into the slow cooker. Cover and cook on high for an additional 20 minutes or until the pasta is tender.
  • Remove and discard chicken bones, then shred the meat. Stir in cream, season with salt and pepper, and mix well. Cover with a lid and cook on high for an additional 5 minutes or until heated through.
  • Pour the aromatic soup into bowls, then generously garnish with fragrant thyme leaves and a sprinkle of fresh lemon zest. Serve alongside delightful twists for a satisfying meal.
