Mumbo Sauce - D.C.'s Famous Sweet & Sour Sauce

Try Chef John's tangy D.C. style sweet-and-sour dip, great for wings and Chinese take-out.
Ingredients:
  • 1 (6 ounce) can tomato paste
  • 0.66666668653488 cup ketchup
  • 0.66666668653488 cup white sugar
  • 1 cup pineapple juice
  • 1 cup distilled white vinegar
  • 1 lemon, juiced
  • 0.25 cup honey
  • 2 tablespoons soy sauce
  • 1.5 tablespoons freshly grated ginger
  • 1 teaspoon cayenne pepper
Instructions:
  • Combine tomato paste, ketchup, and sugar in a saucepan. Stir in pineapple juice, vinegar, lemon juice, and honey. Mix in soy sauce, grated ginger, and cayenne pepper, whisking well. Heat over medium-high until mixture bubbles, then reduce to medium-low. Simmer and whisk occasionally for about 10 minutes until slightly thickened.
  • Take the pan off the heat and let it cool for about 10 minutes. Strain the sauce through a fine strainer to remove any solids.
