Mumbo Sauce - D.C.'s Famous Sweet & Sour Sauce

Try Chef John's tangy D.C. style sweet-and-sour dip, great for wings and Chinese take-out.
Ingredients:
1 (6 ounce) cantomato paste
0.66666668653488 cupketchup
0.66666668653488 cupwhite sugar
1cuppineapple juice
1cupdistilled white vinegar
1lemon, juiced
0.25 cuphoney
2tablespoons soy sauce
1.5 tablespoons freshly gratedginger
1teaspooncayenne pepper
Instructions:
Combine tomato paste, ketchup, and sugar in a saucepan. Stir in pineapple juice, vinegar, lemon juice, and honey. Mix in soy sauce, grated ginger, and cayenne pepper, whisking well. Heat over medium-high until mixture bubbles, then reduce to medium-low. Simmer and whisk occasionally for about 10 minutes until slightly thickened.
Take the pan off the heat and let it cool for about 10 minutes. Strain the sauce through a fine strainer to remove any solids.
