Irresistible mini donuts with vanilla glaze. Customize with dried blueberries or cocoa powder for variety.
Ingredients:
  • 4 cups flour
  • 0.5 teaspoon salt
  • 2 large eggs
  • 1.25 cups sugar
  • 1 teaspoon vanilla
  • 0.66 cup milk
  • 0.25 cup butter, melted
  • vegetable oil for frying
  • 3 cups powdered sugar
  • 0.5 cup melted butter
  • 1 tablespoon vanilla extract
  • 0.125 teaspoon salt
  • 6 tablespoons hot water
Instructions:
  • Combine flour, baking powder, and salt in a bowl. Using an electric mixer on medium speed, beat eggs, sugar, and vanilla in a large bowl until thick, about 3 minutes. Stir together milk and melted butter in a small bowl.
  • Alternate adding the flour mixture and milk mixture to the egg mixture, gently beating at low speed after each addition until combined. If needed, stir in the remaining flour mixture. Cover the dough and chill until it's easy to handle, about 1 hour.
  • On a lightly floured surface, roll out the dough to a 1/2-inch thickness. Use a 1 1/2-inch round cutter to cut out donut holes, dipping the cutter into flour between cuts. Place a wire rack inside a sheet pan for easier handling.
  • In a 4-quart pot or deep-fat fryer, generously pour about 2 quarts of oil to reach a depth of 2 1/2 to 3 inches. Heat the oil to 365°F, using a frying thermometer to maintain the temperature as consistently close to 365°F as possible.
  • Fry 5 to 6 donut holes at a time, flipping once, until they are light and golden brown, approximately 2 minutes.
  • Place the donut holes onto the prepared cooling rack and allow them to cool for approximately 2 minutes.
  • Combine powdered sugar, melted butter, vanilla extract, and salt in a bowl to create a silky vanilla glaze. Gradually whisk in hot water, 1 tablespoon at a time, until you reach your preferred thickness. Add more hot water if needed, 1 teaspoon at a time, to maintain the desired consistency.
  • Dip donuts in luscious vanilla glaze and allow them to rest until the glaze is perfectly set, approximately 30 minutes.
