Mushroom and eggplant stroganoff

Impress with gourmet mushroom and eggplant stroganoff.
Ingredients:
  • 2 medium eggplants, cubed
  • 56.88 gm olive oil
  • 2 medium onions, finely sliced
  • 1 red capsicum, seeded, finely sliced
  • 3 garlic cloves, crushed
  • 2.50 gm ground cumin
  • 1.25 gm paprika
  • 1 small red chilli, seeded, finely chopped
  • 200g button mushrooms, sliced
  • 82.50 gm water
  • 75.00 gm unhulled tahini
  • Juice of 1 lemon
  • 40.00 ml fresh dill, chopped
  • 125.00 ml fresh parsley, chopped
  • Salt, to taste
Instructions:
  • Season eggplant with salt and let it sit for 10 minutes. Rinse thoroughly, then steam over simmering water for 10 minutes until tender. Set aside.
  • In a frying pan over medium heat, sauté onion, capsicum, garlic, chilli, cumin, and paprika for 4-5 mins until onion is tender. Then, add mushroom and eggplant and continue sautéing for 8-10 mins.
  • Blend water, tahini, and lemon until velvety. Combine with vegetables, dill, and season to perfection. Garnish with parsley and enjoy with rice or quinoa and steamed spinach.
