Mushroom and spinach tortellini recipe

Ingredients:
  • 600g pkt Veal Tortellini
  • 500g Italian Style Pork Sausages, casings removed
  • 200g cup mushrooms, thinly sliced
  • 500g tomato pasta sauce with roasted garlic
  • 60g pkt Baby Spinach
Instructions:
  • Boil tortellini in a large saucepan of water according to package instructions until al dente. Save ½ cup (125ml) of cooking liquid before draining.
  • Heat a large frying pan over high heat. Add the sausage and cook, breaking it into lumps with a wooden spoon, until golden brown, about 5 minutes.
  • Saute the mushroom in the pan for 3 minutes until tender. Pour in the pasta sauce and reserved cooking water, and bring it to a boil. Add the tortellini and spinach, toss everything together, and season to taste.
  • Distribute the tortellini mixture evenly into the serving bowls.
