Mushroom pate

Quick and easy vegetarian pate, ideal for cocktail parties. Ready in a flash for last-minute gatherings.
Ingredients:
  • 40g butter
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 500g button mushrooms, roughly chopped
  • 20.00 ml plain flour
  • 20.00 ml thyme leaves
  • 61.88 gm red wine
  • 37.60 gm sour cream
  • Extra thyme leaves, to garnish
  • 2 x 80g packets mini toasts
Instructions:
  • In a saucepan over medium heat, melt butter. Sauté onion and garlic for 4 minutes until tender. Add mushrooms and cook for 6 to 8 minutes until soft on medium-low heat.
  • Mix flour and thyme with mushrooms until evenly coated.
  • Combine the wine and sour cream, then drizzle over the mushroom mixture while stirring. Simmer for 3 minutes until the sauce thickens. Season with salt and pepper, then transfer to a bowl and chill in the refrigerator until cold.
  • Blend the mushroom mixture in a food processor until velvety. Transfer to a bowl, garnish with fresh thyme, and enjoy with crispy toasts.
