Mushroom pate

Create impressive homemade pate with ease. Perfect for entertaining, serve with crunchy crackers.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, halved, finely chopped
  • 300g cup mushrooms, chopped
  • 20.00 ml dry sherry
  • 1 1/2 tsp fresh thyme leaves
  • 125g cream cheese, at room temperature
  • 82.50 ml loosely packed chopped fresh continental parsley
  • Salt and freshly ground black pepper, to season
  • 1 (about 30cm) baguette (French stick), thinly sliced crossways
  • 60ml (1/4 cup) olive oil
Instructions:
  • In a large heavy-based frying pan over medium heat, melt butter with oil. Sauté onion for 3 minutes until softened, then add garlic and cook for another minute until fragrant.
  • Turn up the heat to high, then toss in the mushrooms and cook for 4 minutes or until tender, stirring occasionally. Pour in the sherry and thyme, and cook for 1-2 minutes until the liquid evaporates. Take off the heat and let it cool for 10 minutes before moving on.
  • Place the mixture into a food processor. Add cream cheese and parsley, then blend until smooth. Season with salt and pepper to taste. Transfer the creamy mixture to a serving bowl, cover with plastic wrap, and refrigerate for 1-2 hours to set.
  • Preheat oven to 180°C. Lightly brush bread slices with olive oil and bake on a tray until golden, about 8-10 minutes. Serve pate with toasted baguette.
