Mushrooms with pumpkin & lime (Pengkat)

Ingredients:
  • 500g piece butternut pumpkin, unpeeled, deseeded
  • 3 garlic cloves, crushed
  • 4cm piece fresh ginger, peeled, finely shredded
  • 1 1/2 tsp finely grated lime rind
  • 42.00 gm fresh lime juice
  • Salt & ground black pepper, to taste
  • 32 Swiss brown mushrooms, stalks removed
Instructions:
  • Steam the pumpkin until tender, then cool for 15 minutes. Mash the pumpkin flesh until smooth and mix in garlic, ginger, lime rind, lime juice, salt, and pepper until well combined.
  • Fill the mushrooms with the pumpkin mixture and arrange them on a baking tray.
  • Preheat the grill to high. Grill the mushrooms for 3 minutes until warmed through. Serve hot.
