Quick and easy mussels cooked in a buttery wine sauce. Perfect for dipping crusty bread.
Ingredients:
  • 4 quarts mussels, cleaned and debearded
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 6 tablespoons chopped fresh parsley
  • 1 bay leaf
  • 0.25 teaspoon dried thyme
  • 2 cups white wine
  • 3 tablespoons butter, divided
Instructions:
  • Clean the mussels by removing the beards using a paring knife, discarding any that are open or have broken shells. Set aside.
  • In a large pot, combine onion, garlic, 4 tablespoons of parsley, bay leaf, thyme, wine, and 2 tablespoons of butter. Bring to a boil, then lower heat and cook for 2 minutes. Add mussels, cover, and cook until shells open, about 3 to 4 minutes. Be careful not to overcook. Remove mussels from the sauce and place them in bowls.
  • After straining the liquid, return it to the pot and mix in the rest of the butter and parsley. Heat until the butter melts, then generously pour it over the mussels.
