Luxurious mussels steamed in a rich tomato, white wine, and lobster broth, served with crispy crostini. Delicious gourmet appetizer.
Ingredients:
  • 2 tablespoons olive oil
  • 1 teaspoon minced shallots
  • 1 teaspoon minced garlic
  • 0.25 cup dry white wine
  • 0.25 cup lobster stock
  • 1 cup tomato sauce
  • 12 mussels, cleaned and debearded
  • 0.5 French baguette, halved lengthwise
  • 1 teaspoon duck fat, or more as needed
  • 1 bunch fresh basil leaves, sliced very thinly
Instructions:
  • In a saucepan over medium heat, warm olive oil. Saute shallots and garlic until softened, about 1-2 minutes. Pour in white wine, lobster stock, and tomato sauce. Increase heat to medium-high and simmer. Add mussels, cover, and cook until they open, around 4-6 minutes. Remove any unopened mussels before serving.
  • Position the oven rack 6 inches below the heat source and preheat the broiler.
  • Coat baguette cut sides with aromatic duck fat. Arrange on a baking sheet and broil until golden and crispy, approximately 1 to 2 minutes.
  • Divide mussels between 2 serving bowls, pour flavorful broth over them, sprinkle with fresh sliced basil, and serve alongside a side of crunchy baguette.
